A full bodied Cabernet blend with terroir and complexity - still needs time to open

This dark and almost inky wine had some early fruit and some mustiness on the nose. At first it had chalky tannin and some fruit right up-front and seemed a bit closed despite being decanted for 45 minutes before dinner. However, the longer the wine was open, the longer the finish became. Over the course of dinner (1-1.5 hours) both the tannins and Cabernet fruit became rounder and progressively more expressive toward the back palate, even with a hint of sweetness from the Cabernet franc showing up as well.
The 2007 was composed of 95% Cabernet Sauvignon, 2% Merlot, 2% Cabernet Franc and 1% Petit Verdot. It was fermented in 85% New French oak and15% neutral French oak. This wine was well crafted, with the Cabernet nicely paired with Merlot, Cabernet Franc and Petit Verdot as these three wine varieties provided both a touch of sweetness and added layers of complexity to the wine.
This full bodied wine paired well with steak and perhaps could have been decanted for much longer. It can be obtained directly from the winery and can also be found at Zachy’s. Normally, it sells for anywhere between $125 - $135/btl and is well worth it.
