What Happened? What had been a high quality restaurant is now serving bad food and is poorly run!

We have been frequent visitors to the Saybook Point Inn for several years and have had many a fine meal at Fresh Salt. However, on this visit in September 201, the quality of both the service and food took a dramatic turn for the worse.
Incorporated and managed by the Inn, Fresh Salt is very well decorated in an elegant nautical them and has as an expansive view of the marina. Attached to Fresh Salt, which is the fine dining part of the food service at the Inn is an overflow bar area, outdoor seating adjoining the marina as well as seating surrounding one of two fire pits. The noise level was moderate, likely helping was the fact that the dining room itself was separated into two distinct areas and was nicely separated from the bar area. Clearly, no expense was spared decorating both the bar and dining rooms. There is also expansive private dining available, with the Inn hosting three weddings while we were there. In the dining room itself we found the tables to be nicely sized and adequately spaced. At the time of our meal the restaurant was at full capacity.
While we were there, we met Fresh Salt's new manager of two months. Obviously there had been some staff turnover, but I was not able to determine if this was reflected in the kitchen staff as well. The waitstaff seemed very busy, but also somewhat disorganized and out of kilter. This was reflected in the fact that our main courses arrived before my appetizer, although it was unclear if they had misplaced that order or if the main course was just ready before my soup! These staffing issues also surfaced while we were attempting to get a table for breakfast, where we found it very chaotic and poorly organized.
We started with six oysters, which we were happy to see were expertly prepared and very flavorful. I ordered the scallops for my main course and my wife had the seared tuna in a peach chutney with bok choy and sticky rice. MY scallops were either not fresh or under cooked as they were very rubbery, although the sauce they were served in was nice. The Tuna was under cooked, almost blue, and not even warm at the center, although the chutney was ok. The bok choy looked dead and inedible.
The manager did buy us dessert, but considering the prices we paid, I felt this was of little consolation considering we paid top dollar for bad food and poor service.
